Cake:
1 1 / 2 cup flour 1 tablespoon
teaspoon baking powder
1 / 2 cup sugar
1 1 / 2 c. teaspoon baking soda
1 / 2 c.
teaspoon cinnamon 1 / 2 c.
teaspoon salt 3 / 4 cup oil 2 eggs, lightly beaten
1 tsp teaspoon vanilla
1 1 / 2 cup finely shredded carrots
3 / 4 cup crushed pineapple and sewer
Frosting:
1 ½ cups powdered sugar
125 g cream cheese, softened (I 250g) 2 tablespoons
tablespoon pineapple juice
-Preheat oven to 350F.
-Grease and flour a 9 inch round pan.
-Mix the first ingredients: flour, baking powder, sugar, baking soda, cinnamon and salt.
-Add oil, eggs and vanilla. Mix.
-Stir in carrots and pineapple. Mix well.
-Spread into pan and bake for 35 to 40 minutes in center of oven.
-Nightlife and cool.
-Mix the glaze ingredients until the mixture is smooth.
-Spread over cake.
